Swedish Smörgåstårta: A Cold Sandwich Cake
In Sweden, a cake can be savory, cold, and made from bread. Smörgåstårta, or sandwich cake, is a typical party dish. It looks like a cake, but it is a rich sandwich with several bread layers and creamy shrimp filling. Because it is served cold, you can prepare it before a reception. For one cake, prepare 3–4 eggs, 1 kg of shrimp in shells, 450 ml of cottage cheese, 400 ml of mayonnaise, 100 ml of sour cream, and two loaves of white sandwich bread. You also need black pepper, dill or parsley, and lemon for decoration. Boil and peel the eggs. Peel the shrimp, saving one third for the top. Chop the rest. Mix the chopped shrimp, cottage cheese, and 300 ml of mayonnaise. In another bowl, mix the remaining mayonnaise with the sour cream, and chill it. Cut the bread lengthwise into eight thin slices. Make four bread layers with three filling layers. Spread the chilled sauce over the top and sides. Decorate with shrimp, sliced egg, and herbs. Serve cold, perhaps with a mixed salad.Sources & licenses
