Cheddar cheese is a firm yellow cheese made from cow’s milk. Its special step is called cheddaring. First, makers cut the curds. Then they stack and cut them again and again. This pushes out more whey, so the cheese becomes drier. After that, they add salt, shape the curds, and press them. The cheese then matures for a long time. Cheddar can be white or orange. Its taste may be mild or very sharp. Older cheddar is usually sharper and more crumbly. It also melts well, so it is popular in the United States and the United Kingdom. Try a simple cheddar sandwich. Put slices of cheddar between two pieces of bread. Add apple slices if you like this popular combination. For a hot version, cook the sandwich until the bread is crisp and the cheese melts. Keep cheddar in the refrigerator. The photograph shows blocks and round cheeses at a show, where cheeses were judged for taste, texture, and color.
